  • 2 29-ounce cans tomato sauce
  • 2 8-ounce cans mushroom stems & pieces, drained
  • 3 6-ounce cans tomato paste
  • 1 Tbsp. salt
  • 2 Tsp. oregano leaves
  • 1 Tsp. basil
  • 3 16-ounce containers cottage cheese
  • 3 eggs, slightly beaten
  • 2 16-ounce package lasagna noodles
  • 2 lbs. American cheese slices

InstructionsInstructions  1. For sauce, in Dutch oven over medium heat, in hot salad oil, cook onions 5 minutes or until tender. 2. Stir in 3 cups water, tomatoe sauce and next 5 ingredients; heat to boiling Reduce heat to low; simmer 15 minutes, stirring occasionally. Remove and reserve 6 cups sauce. Into remaining sauce, stir cottage cheese until well mixed; stir in eggs. 3. Meanwhile, preheat oven to 375 degrees farenheit. Grease two 15 1/2" by 10 1/2" roasting pans. Cook lasagna noodles as label directs; drain. Reserve 4 cheese slices for garnish; cut remaining cheese slices into halves. Into each pan, spoon 1 cup reserve sauce; arrange 1/6 of noodles in a layer over sauce; spoon on 1/4 of cottage-cheese mixture and top with 1/4 of cheese pieces. Repeat layers of noodles, cottage cheese mixture and cheese slices; top layer with remaining noodle. Spoon remaining sauce over each pan. Cut reserved cheese slices into 1/2 inch strips; use to garnish tops. 4. Bake about an hour or until lasagna is hot and bubbly. Let stand 15 minutes before serving.
